Also known as Bok Choi, this delicious and easy-to-grow non-heading Chinese cabbage is very popular. Bok Choi is tender and crisp, excellent in stir-frys and very mild flavored. The leaves and can be eaten raw in salads when harvested young or they can be briefly steamed and served as a side dish. Chopped, Bok Choi is wonderful in stir-fry, soups, and stews.
When and Where to Plant: Select sunny location with good soil and drainage, and plant seed as soon as soil can be worked. for constant supply, plant every 2 to 3 weeks until weather becomes hot, then again in the late summer for a fall crop. Soil should be cultivated, enriched with vegetable food, and firmed over the seed.
Care: Keep soil moist, weed free, and apply vegetable food every 4 weeks.
Harvesting: Cut outside leaves when young and tender or the entire plant when 10-14 in./25-36 cm. tall. The center stalk may be removed to force the outside leaves.
