One of the most nutritious of all greens. Collards are extremely popular in the South, and their popularity is growing rapidly in all other regions. Plants are easy-to-grow, tolerant of heat and cold and very rich in vitamins and minerals. The juicy leaves have a mild cabbage-like flavor and are delicious boiled, steamed, or as an addition to salads.
When and Where to Plant: Select a sunny location and plant in the spring when the soil is workable. For best results, loosen soil with spade or fork, fertilize with vegetable food and smooth with rake. Firm soil over seed and keep moist. In mild winter regions plant in late summer for fall and winter harvest.
Care: Keep soil moist, weed free and feed every 4-6 weeks.
Harvesting: Cook entire above ground part of the plant when young or just tender outer leaves. Flavor is sweetened by cool weather and frost.
